for gravy:
6 big tomatoes ground to puree
1tsp red chili powder
½ tsp haldi powder
1 tbs pure vinegar
2 tbsp jaggery
2 small pieces cinnamon
2 pepper corns
4 red kashmiri chilies
4 onoins ground to paste
salt to taste.

For cutlets:
½ kg mutton mince
1 tsp haldi powder
1 tsp red chili powder
½ tsp jeera
few coriander leaves
1 tsp ginger
green chili and garlic paste
3eggs beaten with salt and pepper
salt to taste and 1 big boiled potato
Marinate mince in this masala for 1 hour or so.

fry the ground onions then put all the masalas and last tomato puree and cook till the mixture looks dry then lastly add the vinegar and jaggery cook for 5 minutes more. This is the gravy.
Now cut coriander leaves finely, mash the boiled potato and add to the marinated mince. Make small ball of the mixture and flatten it dipping in rawa likewise all. Then  heat oil in a frying pan dip the cutlet in the beaten egg and put in the oil for frying one by one over low flame fry for 5 minutes then fry on high flame by turning them and take out on tissue paper. Serve the cutlets with the gravy.

Serves 8 people.
